You could block Anytypes network traffic to use it only locally. There is no other option, yet.
It is planned for the future to allow users to disable the Anytype backup node and host your own node.
Yes, as @Flip suggests, until the in app function is implemented, you must block Anytype and Anytype Helper in your firewall. Keep in mind that by doing this you will lose syncing between other devices as well.

Hey team! AnyUpdate (see what i did there :p) on this as a feature since the beta version is out? I would like the possibility to have my AnyType data stored on a home lab server instead of a backup node with AnyType servers.
It would be interesting to know how the backup node is structured. Is it just another instance of Anytype? or is it the database with a listener subscribed to other nodes?
The Any-Sync protocol and its description will be published in mid-July. Backup node is a part of this.
Opening the protocol and its implementations will automatically allow you to self-host them on your home server.
